One hundred years ago, people from Appalachia were assumed to be undernourished and unhealthy. Though sent for infantry duty, by putting weight on them, they would be sent back healthier—assuming they survived. This set of photos was reprinted in newspapers around the country to illustrate the benefits of nourishment and training.
"Private Tobe White, Company K. First North Carolina Infantry, who comes form Buncombe county of that state, and Private W.C. Bryson of the same company. The photo on the left was taken at Camp Glenn, Morehead Ctiy, N.C., August, 1916, while the one at the right shoes the same two men January 20, 1917, five months later at Camp Stewart, Texas, showing White a gainer by 30 pounds and Bryson, heavier by 50 pounds."
